Ingredients and spices needed to make sourdough challah:

  2. 2 tablespoons (35 grams/1.2 ounces) high-strength, fully fermented sourdough starter, fresh 8 to 12 hours ahead

  4. About 1 cup (135 grams/4.8 ounces) of bread flour

  6. 1/4 cup (60 grams / 2 ounces) warm water
  7. 3 large eggs plus 1 for the glaze
  8. 1 1/2 teaspoons (8 grams / 0.3 ounces) salt
  9. 1/4 cup (55 grams / 1.9 ounces) vegetable oil
  10. 3 tablespoons (65 grams / 2.3 ounces) pure honey or about 1/3 cup (60 grams / 2.1 ounces) granulated sugar
  11. About 3 cups (400 grams) of bread flour
  12. A fully cooked sourdough starter

Instructions for making sourdough challah

  1. In the morning. Mix in the yeast starter. Boil the starter in water until it partially dissolves, then add the flour. Fry until smooth.   2. First add the oil in a large bowl and then measure the honey into the same cup. If the dough is a moldy ball, knead it on the work surface, add the starter and knead until the dough is smooth, no more than 10 minutes. The dough should feel soft and very thick.
  3. If it is winter, immediately soak the mixing bowl in hot water to clean it and heat the powder to boil. Place the dough inside and cover with plastic wrap. Let the dough rest for about 2 hours. It took 2.5 hours at 28 o C.
  4. Set out a large cake pan. I baked a big loaf of bread. You can make 2 as you like. Divide the dough into 6 rolls. (for every 170 grams).
  5. Braid or shape as desired, place on the prepared baking sheet and cover tightly with plastic wrap. Let rise until triple in size, about 5 hours. (took 2.5 hours at 28 o C). If the bread doesn't push back, try pressing the dough lightly with your finger, the dough won't push back, but it will stick. Wash a glass of egg with a tablespoon of warm milk. Sprinkle with nuts if you like (I used chia seeds).
  6. Preheat the oven to 180°C. Bake for 40-45 minutes until golden brown. After the first 20 minutes of baking, move the bread from front to back to help brown evenly; If large loaves burn quickly, cover with foil.
  7. Remove from the oven and leave to cool on a wire rack.
