Ingredients and Seasonings for Oysters Rockefeller:
- 3 many oysters
- 4 tablespoons of uncooked butter
- 1 cup chopped onion
- 4 ounces spinach leaves, chopped (about 6 cups)
- 1/2 cup finely chopped parsley (I use stems and all)
- 3/4 cup panko (Japanese breadcrumbs)
- 2/3 cup grated Parmesan cheese
- 2 green onions, chopped
- Lemon slices
Steps to prepare Oyster Rockefeller
- Preheat the oven to 450 degrees Fahrenheit. When all the butter is melted, fry the onion until it becomes transparent.

- Add spinach and parsley and continue cooking until spinach is wilted.

- Add the panko, parmesan and chives, toss and mix well.

- While the mixture is cooling, shuck the oysters and place them on a baking sheet lined with aluminum foil. I find that the holes in the pot help hold the oysters in place.

- Add 1-2 tablespoons of each oyster, depending on size.

- Fry for 6-8 minutes until the edges are golden brown and the oysters are puffed up. (I forgot this photo! :D)
- Serve with lemon wedges - I recommend a good squeeze over each lemon - and enjoy!
